Makhan Malai requires eight hours to prepare. The cow milk is first boiled in a large pot the day before, and it is then cooked slowly over a chullah or clay oven. After adding a significant amount of fresh cream, the milk is heated once more.

After that, a certain amount of malai is added, and it is gradually stirred. The mixture is constantly churned after adding sugar, kesar, cardamom powder, and finely chopped cashew nuts, pistachios, and almonds. Large jars are used to properly collect the foam that accumulates on top. Until the entire frothy layer is gathered, this laborious procedure is repeated.

Afterward, you should have a glass of kesariya rabdi or badam doodh.
